What is sensitivity analysis for?

Finding which assumption your answer actually depends on. Flex each input in turn and the one that moves the output most is the one worth researching properly — the rest can stay estimates.

What's the difference between one-way and two-way?

One-way flexes a single input and reports the output. Two-way flexes a pair and produces a grid, which shows how the two interact rather than just their separate effects.

How is this different from scenario planning?

Sensitivity moves one thing at a time to isolate what matters. Scenarios move a coherent set together — 'recession' changes volume, price and collection timing at once — to describe a plausible world.
